Eggplant/Tofu Teriyaki over Steamed Ube

Cut vegetables, tofu, and ube into bite-size pieces. Steam the ube until al dente. While it's cooking, stir fry eggplant, green pepper, and tofu. Cover with teriyaki sauce and simmer until ube is done. Serve vegetables over ube. Eat up.
